Tapioca Pizza Crust

Pizza is one of those foods that my family just loves, as most people do. We have multiple versions that are grain free, which allows for diet variation, along with accomodating what’s in your pantry. Here is one of my favorites, the tapioca flour pizza crust. For sauces, sometimes we make our own garlic sauce, other times we go with a tomato sauce, however the mood may strike us.

Ingredients:

2 Eggs

2 cups Cassava Flour / Tapioca Flour

1/2 cup Coconut Flour

1 tsp Salt

1/2 cup Coconut oil

1 cup water

Directions:

Preheat oven to 350 degrees F.

In a mixing bowl, whisk together the cassava flour and coconut flour.

Combine the coconut oil, water, and salt in a pot. Heat and stir until just boiling.
Pour the water and oil mixture over the flour and stir with a wooden spoon until the flour is moistened (it will be dry and crumbly).

Add the eggs and mix everything well with the wooden spoon. You should be able to gather the dough up into a ball. Add more water or flour as needed to achieve that consistency.

Flatten the dough onto your preferred baking sheet (I like using parchment paper on the sheet) and bake until lightly golden. Depending on your oven, about 15-20 minutes.

Pull out the sheet, add sauce and toppings, and bake for another 10-15 minutes or until desired browning of the cheese/toppings.
