Ingredients
6 eggs
3/4 c almond butter
1/4 c coconut oil
1 tsp. apple cider vinegar
1/2 tsp. salt
1/4 c ground flax seeds
3 tbsp. coconut flour
1 tsp. baking soda
Directions
Preheat oven at 350 F.
Put eggs, almond butter, coconut oil, vinegar, and salt into a big bowl, blend with an immersion blender until nice and bubbly.
Combine coconut flour, ground flax seed, and baking soda. If you like seeds you can also add some whole flax seeds and sesame seeds. Add to the egg mixture and mix with a spatula.
Pour into a greased or parchment paper lined pan. Mine is 11 x 4 in, you can use a smaller one like 8 x 4 the bread will just be higher. Sprinkle your choice of seeds on top, if you like.
Bake for 45 minutes.
Use a toothpick to test if the bread is ready. If any dough still sticks to the toothpick, let the bread bake a couple of extra minutes and then re-test with a toothpick.
